Vegan Dip

A delish nutty protein-powered creamy dip that is yummy with slow baked or sprouted crackers & a palate of celery & carrot sticks. As a snack when you are on the go it beats the commercial dips!

Rich in Iron, Omega fatty acids& antioxidants this recipe is guaranteed to bring out the sunshine on those low energy days! And soaking the cashews allow nut sensitive folk to digest them more easily with the lemon juice promoting your digestive juices

1 cup cashews – soak in water over night

1 globe artichoke – steam for 20 minutes, peel off leaf & use the heart. This is a great anti-oxidant& is a big liver & gall bladder cleanser

2 marinated artichoke – marinate in oil & vinegar overnight

Baby spinach leaves –2 big handfuls.This is very alkaline & often difficult for the digestion to absorb

½ lemons – assists the spinach to be digested

1-2 tblspn olive oil

Garlic – 1 clove with the skin on. This is a fab anti biotic! Kick those germs!!

Sea salt – ½ teaspoon

Pure water – 3-5 tablespoons

Add all ingredients to your blender & blend until smooth.

Serve with a sprinkle of olive oil & paprika
