Mock Chicken or Tuna Salad

A recipie that is particularly good for our men!

Rich in vegetable protein, it is fully Vegan in nature & has high levels of essential fatty acids. Pumpkin seeds are a source of nutrient for the male Prostate & support the cleansing action of the blood supply to this essential gland! The lemon jiuce & the apple cider vinegar are great for stimulating the gastric secretions & supporting digestion.


Serves 4 to 6


  • 1 cup cashews, soaked overnight rinsed and drained
  • 2 tablespoons olive oil
  • 1 tablespoon raw apple cider vinegar
  • 1 tablespoon filtered water, add more if needed
  • Juice of 1 lemon
  • 1 tablespoon raw honey or Maple Syrup
  • 1/2 teaspoon mustard powder
  • Sea salt and freshly ground black pepper to taste

Place all ingredients in a high-speed blender and process, scraping down as necessary, until mixture is smooth.


  • 1/2 cup sunflower seeds
  • 1 cup walnuts
  • 1/2 cup pumpkin seeds
  • 1/2 to 2/3 cup mayo (see above)
  • 1-2 cups grapes, halved
  • 1/2 cup spring onions
  • 2 cups celery, sliced
  • 2 cups cucumber, peeled and diced
  • 1/2 lemon, juice from
  • Sea salt and ground black pepper to taste*
  1. Soak walnuts, sunflower seeds and pumpkin seeds in water, overnight. Drain and rinse.
  2. Place nut mixture in food processor and process until finely blended. Careful not to make a paste!
  3. Stir in mayo
  4. Mix thoroughly.
  5. Mix in all other ingredients.
  6. Scoop onto Cos / Mescalin lettuce leaf
  7. Top with cracked pepper.
